INGREDIENTS

  • Avocado Oil Spray
  • 1kg diced chuck steak
  • 2 Onions,  sliced
  • 2 cups Passatta
  • 3 x celery stalks, cleaned and sliced 
  • 3 medium carrots, sliced thick
  • 350gms Brown Mushrooms, sliced
  • 2 garlic cloves
  • 5 rindless bacon shortcuts, sliced
  • 1 x mediuam sweet potato, peeled and diced
  • 2 small eggplant, peeled and diced
  • 1 cup beef stock
  • 1/2 cup of Shiraz
  • 1 tbsp dried rosemary
  • 1 tsp dried thyme
  • 1/4 cup of fresh parsley
  • salt and pepper to taste
  • 2 tbsps of corn flour

Method

  • Spray a frypan with avocado oil.  Add diced bacon, onion and garlic. Saute til onion is clear.
  • Add the beef and brown.
  • Add the sweet potato, meat and then pour over the rest of the ingredients and mix.
  • Put the lid on top and cook on low for 6 hours.
  • Serve
