Method:

  • Cook the rice according to the package directions. Once cooked, drain and set aside to cool to room temperature.
  • Assemble the salad in a 475ml mason jar or container in the following order to ensure optimal freshness.
  • Pour the Green Goddess Salad Dressing into the base of the jar.
  • Add the thawed edamame, followed by the broccoli florets and then the cooled brown rice.
  • Top the rice with the diced cucumber, then the baby spinach and finish with the hemp seeds on top.
  • Seal the jar/container tightly with the lid and refrigerate until ready to serve.
  • When ready to eat, shake the jar/container well to distribute the dressing evenly throughout the salad.
  • Divide the contents equally between 2 bowls and serve.
