INGREDIENTS

  • 3 egg yolks
  • 1 tsp sea salt
  • 2 tbs lemon juice
  • 2 tbs water
  • 1 tsp mustard
  • 1 1/2 cups of avocado oil

Method:

  • Place egg yolks, mustard, salt, lemon juice and water into a food processor or bowl.
  • Combine ingredients and then leave it working at a low speed.
  • Drizzel the avocado oil into the mix slowly and consistently, until the oil is combined and the mixture thickens. Will take a couple of minutes.
  • Place the finished product into an airtight container and refrigerate. Will last for about a week.
